Ladies we all know Thanksgiving is not Thanksgiving with out a sweet potato pie. My dad has been divorced from my mother for over 20 years he still talks about her sweet potatooe pie and how much he misses it. This recipe I am sharing is very similar to my Mother’s recipe. One thing I learned about making a sweet potatoe pie is that when you bake the potatoes instead of boiling them the texture of the pie is better not so “mushy”. You can also try diferent variations for instance I line the bottom of my pie crust with coconut for some, crush pecans and mix with caramel and add to the bottom of the crust also. Some people do a marshmallow topping or a meringue topping. Do what you feel but you can not skip the sweet potatoe pie at Thanksgiving dinner Bon Apettite!
2 eggs, beaten
2 cups mashed cooked sweet potatoes
½ cup firmly packed brown sugar
¼ cup sugar
1 ½ tbs margarine or butter, softened
1 ½ tsp ground cinnamon
½ tsp vanilla extract
½ tsp ground ginger
½ tsp salt
¼ tsp ground allspice
¼ tsp ground cloves
¼ tsp ground nutmeg
1 can evaporated milk (12 ounces)
1 tbs flour
1 unbaked pastry shell (9 inch) (I sometimes make my own pie crust if I have the time and space see recipe below for pie crust recipe )
Heat Oven to 425°
1) Mix eggs, potatoes, sugars, margarine and spices in a large bowl.
2) Gradually beat in milk, mix thoroughly.
3) Stir in flour until well blended, pour into pastry shell.
4) Bake 20 mins. Reduce oven temp. to 350° Bake 30 to 35 mins. until set or knife inserted in center comes out clean.
Homemade pie Crust
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup butter, chilled and diced
1/4 cup ice water
In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 4 hours or overnight.
Roll dough out to fit a 9 inch pie plate. Place crust in pie plate. Press the dough evenly into the bottom and sides of the pie plate.
