Insomnia Cookies is introducing a whole new Valentine’s Day collection, including a lava cake.
Valentine’s Day is known for chocolate delights; it looks like the cookie brand wants in on that chocolate goodness. The limited-edition Valentine’s collection is from Tuesday, Jan. 24, until February 19.
The following is included in the Valentine-s collection:
- Red Velvet Classic – Red velvet dough, packed with cream cheese icing chunks.
- Chocolate Covered Strawberry Classic – Vanilla cookie base with layers of strawberry bits and milk chocolate chunks.
- Vegan Red Velvet Cookies ‘N Cream Classic – Red velvet cookie, packed with sandwich cookie bits, and mini vanilla & chocolate chips. 100% vegan
- Deluxe Filled Lava Cake made with Ghirardelli – A deluxe rich chocolate cookie dough mixed with Ghirardelli semi-sweet chocolate chips, Ghirardelli cocoa powder and loaded with a Ghirardelli chocolate filling.
- Red Velvet Brookie – Chocolate brownie base and a red velvet cookie top, with cream cheese icing chunks sandwiched between both layers.
- Red Velvet Ice Cream – Red velvet flavored ice cream with swirls of cream cheese icing, packed with red velvet cookie pieces, and chocolate hearts.
Insomnia Cookies is also offering select boxes at the bakeries.

The last day to buy select Valentine’s Day options are on February 19, while supplies last.
