A new type of pizza is going viral thanks to unexpected frigid temperatures in Florida.

A North Palm Beach pizza spot is now serving iguana, and yes, it is very real. Bucks Coal Fired announced Monday, February 2, that it added a specialty pizza called “The Everglades” to its menu, featuring iguana as the main protein. The idea came together after a rare cold snap swept through Florida, leaving invasive iguanas cold-stunned across the region.
Local trapper Ryan Izquierdo explained that when temperatures drop, the cold-blooded reptiles shut down to survive.
“They enter a state of paralysis where their muscles stop working, their body shuts down, and their heart rate slows down to survive,” he explained to PEOPLE. As that happens, iguanas clinging to trees lose their grip and “just end up falling from the trees.”
During the cold weather event, the Florida Fish and Wildlife Conservation Commission opened a collection period allowing residents to turn in iguanas found on public or private property. Izquierdo said he personally collected more than 90 iguanas on January 30.
“We were able to do good work and remove the iguanas and educate people, and it was just a great time,” he told CBS News.
Izquierdo later teamed up with Bucks Coal Fired, documenting the process on social media. He said he cleaned the animals beforehand and “used the legs and the tail for the pizza.” Inside the restaurant, the meat was sanitized before being added to a pie topped with olive oil, parmesan, ranch, bacon, venison, and iguana.
After taking a bite, Izquierdo called it “unbelievable,” saying, “The iguana meat really tastes like frog leg. It’s a little bit sweet, I can’t really describe it.”
While some followers were grossed out, others were intrigued by this delicacy.
